A recipe... and a thought*.
Aioli
2 Garlic cloves (or more, if you like it stronger)
1 large egg yoke
2 teaspoons fresh lemon juice
1/2 tsp dijon mustard (or more " ")
1/4 cup extra virgin olive oil
3 tbsp vegetable oil
Mince and mash garlic to a paste with a pinch of salt using a large heavy knife.
Whisk together yolk, lemon juice and mustard in a bowl. Combine oils and add (a few drops at a time) to the yoke mixture, whisking constantly, until all oil is "incorperated and mixture is fully emulsified". (If mixture separates, stop adding oil and continue whisking until mixture comes together, then resume adding oil.)
Whisk in garlic paste and season with salt and pepper (unless you don't feel like it). If the aioli is too thick, add a few drops of water.
Chill, covered, until ready to use.
Makes about half a cup.
...............
Why is pain bad?
Because when you get hurt, things are destroyed. Bones can be broken and blood vessels can be damaged. And when your body is hurt you can't function properly to.. get away when something is trying to kill you. Or heal properly, or get out of the cold..
So your brain tells you not to get hurt because then you would have a smaller chance of living.
Survival of the fittest.
You need strength.
If pain was associated with good, like food is.. you probably wouldn't live that long. Nature programmed you to dislike pain, and try to avoid it. so you'll live. So you'll reproduce. Because that's all life is.
Kinda depressing, huh?

* I realize this thought came more or less out of nowhere. Thoughts do that sometimes.
